Deep and intense ruby purple in color. This wine
offers complex and typical aromas of ripe red pepper, blackberries and
currants with smoky spices. The concentrated texture offers a lot of
presence to structured and vertical profile in the mouth, thanks to numerous
and very fine tannins. The finish proclaims back the fresh fruit and an
impressive length.

Analysis: Alcohol 13,5 % vol.
Vinification: The grapes were harvested by hand during
the last week of May and carefully transported to the winery. As soon as the
grapes were destemmed they were gently crushed and sent to a stainless steel
vat for fermentation where selected yeasts were added. During the
fermentation process, which reached temperatures of 28-30 degrees C,
depending on the characteristics of the grape, the must (juice with grape
skins) was macerated with aerated recycling gradually moving the liquid from
the bottom to the top of the vat 1.5 times until the fermentation process
reached half the alcoholic volume. The alcoholic fermentation was finalized
by macerating the wine with the grape skins for one more week to achieve on
improved structure and more character. Next the wine was separated from the
grape skins which were then pressed to yield a second fraction of wine.
After that, the wine was aged in French oak barrels (new, second and third
use) of 225 and 400 liters where it remained for a period of 12 months.
Finally, the best barrels were selected to create the blend, and then it was
then gently filtered and bottled.
Tasting Note: Presenting a deep black with shiny purple
shades, this wine offers a nose made of black fruits such as blueberries and
blackcurrants, tones of leather and black pepper. Spices, tobacco and noble
woods are brought by the oak aging while other notes of dried herbs, roasted
red peppers, dried tomatoes and cacao make it each time more complex. In the
mouth, the right ripeness of the fruit joins the natural freshness of the
valley to give birth to a great carmenere personality: Present but velvety
tannins give structure to the voluminous palate and further stretch it until
a nervous and fresh finish where are newly drowned the precision and
complexity of the grape.
