Alcohol 13.5 % vol. Vinification:
The grapes were handpicked during the second and third weeks of May and
carefully transported to the winery. They were destemmed, lightly crushed
and deposited into stainless steel tanks for fermentation. The must was
inoculated with selected yeasts and allowed to ferment at 28 – 30 degrees C
(82 – 86 degrees F) with regular pumpovers that ranged from 1.5 times the
volume in the beginning to half volume at the end. Upon completion of the
alcoholic fermentation, the wine remained on its skins for another week to
develop additional structure and character. The wine was then separated from
the skins, the skins pressed, and the press wine was reserved separately.
The free-run wine was aged in oak barrels for 9 months and then blended 50 –
50% with the remaining wine that had been held in stainless steel tanks. The
finished wine was cold stabilized, filtered, and bottled.
Tasting Note: Wrapped up in an intense and dazzling ruby
purple, this syrah shows a lot of character: Bilberries, redcurrant and wild
plums melted and spicy flower notes. The set gets deeper then adding earthy
and stony tones, game with pink pepper more soft spices and vanilla from the
barrels. Fruit ripeness and freshness move harmoniously through a juicy,
crunchy texture where the youth still speaks loud. The still firms tannins
build a deep weave that will keep backing up through years this audacious
profile that concludes for now with a tactile presentation sealed with
slightly candied wild berries, aromatic herbs and floral hints.
