Intense pale gold with a slight green shade in color. Aromatic typical nose
of dried fruits, white flowers, white fruits, subtle spices and mineral
hints. Dense and vibrant, the mouth balances richness and crispy structure
and delivers a great mineral character through a fine fruity finish.

Harvest: Manual. Grapes are carefully transported to the winery in small
containers.
Analysis: Alcohol 13.5 % vol. Vinification: The grapes have been harvested
by hand during the three first weeks of march and lightly pressed very
slowly to allow 6 hours of contact between the juice and the skins. It was
then transferred to a stainless steel tank and left to decant until
obtaining a high degree of limpidity. The clean juice was transferred to a
fermentation of tank and inoculated with selected yeasts (zimaflore VL1) to
highlight the natural aroma of the variety. The fermentation has been slow,
between 12 and 16 degrees and 50% went to French oak barrels, new, second
and third use to end it. No malolactic fermentation at all. Lees has been
worked during all the process in the barrels and in the tank as well, 7
months later, both elements were blended, stabilized, filtered and bottled.
Tasting Note: The bright golden-yellow Chardonnay offers a nose as lively as
its color. Citrus aromas of mandarin orange and ripe lemons lead the way
with fresh pineapple flowing close behind. Subtle notes of honey and butter
follow seasoned with a light touch of spicy vanilla, crème anglais and just
a hint of smoke. The palate presents good volume with a voluptuousness in
harmonious balance with its natural freshness. Tense yet well-rounded and
backed by the structure gained with the oak aging. The nervous finish brings
with it brilliant tones of citrus and honey sealed with a mineral edge. Best Enjoyed: Best consumed within
