Pure and dazzling pale yellow with green shades introducing a nose of green
and white fruits, citrus tones and flowers. Sharp at the palate, good volume
with a crispy, mineral freshness and a bright fruity ending full of
relieves.

Vinification: The different grape
varieties were handpicked between the two last weeks of February. The grapes
were destemmed and pressed in a pneumatic press. The juice remained on the
skins for an average of 6 hours before gently extracted at low pressure and
statically decanted in stainless steel tanks until limpidity between 100 and
250 NTU is obtained. The clean must is then transferred to a fermentation
tank and inoculated with selected yeasts to highlight the natural aromas of
the grape. Alcoholic fermentation took place at 14 – 16 degrees (57 – 61
degrees F) and allowed to remain in the tanks with carbonic gas and daily
lees stirring for an additional ten days. The finished wine was stabilized
for proteins and tartaric acid, filtered, and bottled.
Tasting Note: This 2011 wine proclaims
its youth through its very brilliantly pristine light golden color with a
nose that expresses its all the potency of its youthfulness. Gooseberries
and cherimoyas are punctuated by a floral note backed by white peach, green
pear, and yellow grapefruit, all heightened by a stony-edged mineral accent.
The palate starts frank and clean and immediately develops a sensation of
well-rounded volume that envelops the natural freshness and mineral tones
inherent in its origins. Just the right balance stimulates a sense of
harmony between the crisp texture, the elegant structure, and the mineral
aromatic finish.
