Tamaya Wine - Estate Line - Cabernet Sauvignon


 

Deep ruby purple. Fresh and mineral nose of red ripe fruits, dried herbs and fine spicy oak. Juicy, with a lot of texture, the mouth is armed with firms and powerful tannins. The fresh finish expresses all the character of this cabernet.

Harvest: Manual. Grapes are carefully transported to the winery in small containers

Analysis: Alcohol 13 % vol.

Vinification: The grapes were handpicked during the first week of May and carefully transported to the winery. They were destemmed, lightly crushed and deposited into stainless steel tanks for fermentation. The must was inoculated with selected yeasts and allowed to ferment at 28 – 30 degrees C (82 – 86 degrees F) with regular pumpovers that ranged from 1.5 times the volume in the beginning to half volume at the end. Upon completion of the alcoholic fermentation, the wine remained on its skins for another week to develop additional structure and character. The wine was then separated from the skins, the skins pressed, and the press wine was reserved separately. The free-run wine was aged in oak barrels for 10 months and then blended 50 – 50% with the remaining wine that had been held in stainless steel tanks. The finished wine was cold stabilized, filtered, and bottled.

Tasting Note: Deep yet brilliant purplish-garnet in color, with highly expressive balsamic aromas that waft from the glass along with notes of wet rocks, bread crust, aromatic tobacco along with the clean fruity notes of ripe cherries and black currant juice. Accents of wild rosemary make an appearance, along with a subtle touch of leather, dark chocolate and black pepper. The palate presents good volume and a juicy texture that grows and intensifies in the mouth thanks to its firm young tannins. The mouth feel pairs up with the fresh acidity to land the wine its solid structure and devise and expressive balsamic finish full of spicy red fruits with a trace of minerals that will become more complex over time.
